Peach Salsa Recipe

Don't know what to do with those fresh peaches? Here's an easy peach salsa recipe you can use! This is great with nachos or a grilled dinner.


Ingredients:

  • 6 cups prepared peaches (about 12 medium)
  • 1 1/4 chopped red onion
  • 4 jalapeno peppers, finely chopped
  • 1 red pepper, chopped
  • 1/2 cup loosely packed finely chopped cilantro
  • 1/2 cup white vinegar
  • 2 Tbsp liquid honey
  • 1 clove garlic, minced
  • 1 1/2 tsp ground cumin
  • 1/2 tsp cayenne pepper

Blanch, peel, pit and chop peaches.

Combine peaches, onion, peppers, cilantro, vinegar, honey, garlic, cumin and cayenne pepper in a large stainless steel saucepan.

Bring to a boil stirring constantly to prevent burning.

Boil gently, stirring frequently, 5 minutes.

Ladle salsa into a hot jar to within 1/4 inch of top rim.

Remove air bubbles with rubber spatula.

Wipe rim to remove stickiness.

Center lid on jar and apply screw band just until fingertip tight.

Place jars in canner.

Cover canner, return water to a boil; process 10 minutes at altitudes up to 1,000 ft.

Remove jars. Cool 24 hours.
